Healthy and so flavorful, this Tomato Avocado Salad makes a great addition to your dinner or lunch. This is one of the most loved recipes in my family!

Avocados:

Avocados are packed with healthy fats, which contrary to popular belief, can actually help you lose weight. They are also rich in fiber, so they help you feel full for longer.

Tomatoes:

They are heart healthy foods mostly due to lycopene, which is a powerful antioxidant that gives tomatoes their red color. Our body cannot produce lycopene so it must cone from food sources.
This potent carotenoid and phytonutrient help neutralize free radicals in our body.
Tomatoes are also packed with vitamin E and C, which are great for heart health.

Tomato Avocado Salad Recipe


Ingredients

➱2-3 large fresh garden tomatoes washed and sliced
➱A handful of cherry tomatoes
➱2 medium avocados, peeled and cut into bite size chunks
➱1 red onion, thinly sliced (Optional)
➱1 tablespoon of olive oil
➱Juice of 1 lemon
➱Fresh basil, parsley or coriander for garnishing
➱Salt and freshly ground black pepper to taste

Instructions

In a salad bowl add sliced tomatoes, avocados and red onion (if any). In a separate bowl mix olive oil with lemon juice and toss the mixture into the salad Season with salt and pepper and serve immediately.

Garnish with basil, parsley or coriander….
