Soy Flour Pancakes: High in protein and tasty

A good-for-you, tasty recipe for those of us who are cutting down on wheat. High in protein and tasty. These are floppier than a traditional pancake, so use care to flip them. Smaller, thinner cakes are helpful.

Soy Flour Pancakes Recipe

Ingredients

• 2 eggs
• ¹/₂ cup soy flour
• 1 tsp. baking powder
• 1 Tbsp. olive oil (two can be used for density)
• ¹/₈ sugar
• 2 tsp Cardamom Powder
• ¹/₈ tsp. salt (optional)

Method

Beat all the ingredients together in a bowl into a smooth batter slightly lighter than the cake mixture. Heat griddle or pan to medium-high heat. Use a non-stick cooking spray or butter (Smart Balance is my favorite!) before dropping batter onto the pan.

Pour batter into pan so that the pancakes are about 4" in diameter (smaller is ok too but bigger than this and they will be difficult to flip). Makes about 6 4" pancakes...about 2 servings.

Tips: You can replace the Soy flour with all purpose flour.
