A warming sausage and bean stew
Simple and satisfying, this hearty sausage and bean casserole is fast enough to prepare on a busy evening. This dish is so easy: Just brown your favorite smoked sausage, toss the ingredients together, and let the slow cooker do the rest. All you need to round out the meal is a simple green salad and loaf of crusty bread.

➟1 large onion, chopped
➟2 garlic cloves, crushed
➟1 small red chili, deseeded, finely chopped
➟2 teaspoons sweet paprika
➟Tomatoes, chopped
➟Cooked beans, rinsed, drained
➟flat-leaf parsley leaves, chopped, to serve

METHOD
Heat oil in a heavy-based saucepan over medium heat. Add sausages and cook, turning often, for 4 minutes or until browned. Transfer to a plate. Cover to keep warm.
In a saucepan add cooking oil, onion, garlic, chili and sweet paprika and cook for 4 minutes or until tender. Add potatoes, tomatoes, zucchini, and beans. Stir well. Bring to the boil and add sausages. Reduce heat to medium-low and simmer, uncovered, stirring occasionally, for 30 minutes or until sausages are cooked.
Sprinkle with parsley and serve!
