GOAT CURRY WITH YOGURT GRAVY RECIPE
INGREDIENTS:
1 kg Goat meat
1 Big onion
2 Tbsp. Ghee (you can substitute with oil)
1 Cup Yogurt (250 ml)
1 Tbsp. Grated garlic
Few chopped coriander leaves for garnishing
1 Small stick of Cinnamon
2 Bay Leaves
1/2 tsp. black pepper
1 Tbsp. Red chili powder( adjust according to your
preference)
1/2 Teaspoon Turmeric Powder
2 Tablespoons Gram Masala
Method:
Wash
goat meat well and keep aside.
Slice
onions vertically into very thin slices.
Add
ghee or oil in a big saucepan kept on medium high heat, and whole spices along
with sliced onions (bay leaves and cinnamon).
Sprinkle some salt over them. (Salt makes
moisture from onions evaporate).
Sauté
the onions till brown, about 8 minutes.
Now
add goat meat and mix well. Fry for 5 minutes, stirring occasionally.
Add
Yogurt, red chili powder, turmeric, black pepper and salt.
Mix,
cover and cook on medium high heat for 40 minutes.
Check
in between. If the mixture looks dry, add some water and continue cooking.
Add
gram masala and grated garlic.
Again
cover and cook until meat is soft when checked using toothpick.
Should
take about 50 minutes total but the time may vary depending upon how tender
your goat meat is.
Sprinkle
some chopped coriander leaves.
Mix
well and remove from heat.
Tastes
best with white rice. Serve hot.
