Saucy sausage pasta


My absolute favorite dinners are the easy weeknight kind. The kind that can be whipped up in thirty minutes or less from start to finish and only mess up one dish. It’s one of our new favorites — I make it all the time because it’s so yummy and easy!

Sausage pasta recipe

This is so simple - and utterly, utterly delicious. I'm just sorry that I had to share the whole pan with the rest of the family as I genuinely think I could have eaten the entire meal in one sitting! Can't recommend enough and will be making this as often as the rest of the family will allow. Add some green veggies on the side and away you go.

Main Ingredients

Pasta preferably spaghetti
8 sliced sausages
2 medium sized onions -diced
3 cloves of garlic -minced
3 ripe tomatoes - diced
Fresh coriander leaves

For Seasoning:

Sunflower oil,
Salt,
¹/₂ chili beef cube,
1 tablespoon of soy sauce,
A pinch of cayenne pepper,
1 tablespoon of smoked paprika,
A pinch of chili flakes
¹/₄ teaspoon of black pepper.

Method

In a clean saucepan, boil some water on medium high heat with a tablespoon of sunflower oil and ¹/₂ teaspoon of salt, mix everything and cover for a more effective boil. Check on the sausages. Add the tomatoes, the seasoning, ¹/₄ cup of water and mix everything together. Let it simmer for 8 to 10 mins while covered.

After 10 mins, uncover the pan and mix everything, taste to know if you will need to adjust the salt or pepper, switch off heat and cover. Switch the concentration to the pasta. About 8 to 10 mins the pasta should be ready.

Once everything is cooked, drain the water for the pasta. Add the sausage to the pasta and mix well then add fresh coriander leaves and serve. Enjoy!!
