Delicious Vegetable Soup
A low calorie, but filling, tomato-based vegetable soup. I use fresh vegetables when in the season, frozen or canned in winter.
I've been looking for a tasty homemade vegetable soup recipe and I'm happy to say this one surpassed my expectations. It's delicious, and even my hubby who HATES vegetable soup with every fiber of his being enjoyed it.
Delicious Vegetable Soup Recipe
Ingredients:
⭆¹/₂ cup (finely chopped) onion⭆¹/₃ cup chopped tomatoes
⭆¹/₂ cup (cut into small squares) carrots
⭆¹/₂ cup (cut to small size) beans
⭆¹/₄ cup (I have used frozen peas) green peas
⭆¹/₄ cup corn
⭆¹/₄ tsp. dried basil
⭆¹/₄ tsp. Italian seasoning
⭆powdered (¹₂ tsp. adjust according to taste) black pepper
⭆Salt to taste
⭆3 cups water
⭆3 cups vegetable broth
⭆2 tsp. oil
Heat oil in a pan and add the chopped onions. Fry till they turn translucent and add the chopped tomatoes. Fry for 2 minutes and add the chopped veggies, basil, Italian seasoning, and salt. Add the water and cover it and cook them until they veggies become tender.

The method of Preparation:
Heat oil in a pan and add the chopped onions. Fry till they turn translucent and add the chopped tomatoes. Fry for 2 minutes and add the chopped veggies, basil, Italian seasoning, and salt. Add the water and cover it and cook them until they veggies become tender.
Now add the vegetable broth and cook for another 15 minutes. Add the crushed pepper.
Serve hot.
