CURRIED SWEET POTATOES
These roasted sweet potatoes are the perfect solution when you’re looking for a simple side dish. The trick is getting your roasting pan nice and hot before adding the potatoes. The quick burst of heat helps to caramelize them, bringing out the best of their naturally sweet, robust flavor. When combined with a sultry sprinkle of curry powder they are absolutely addicting. CURRIED SWEET POTATOES RECIPE
Ingredients:
1 sweet potato, chopped
1 Tbsp. coconut oil
¹/₄ Tsp. ground cardamom
¹/₂ Tsp. ground coriander
¹/₂ Tsp. yellow curry powder
¹/₄ Tsp. salt
¹/₄ Tsp. black pepper
¹/₈ Tsp. cayenne powder (optional)
1 Tbsp. coconut oil
¹/₄ Tsp. ground cardamom
¹/₂ Tsp. ground coriander
¹/₂ Tsp. yellow curry powder
¹/₄ Tsp. salt
¹/₄ Tsp. black pepper
¹/₈ Tsp. cayenne powder (optional)
Method:
Chop the sweet potato into ¹/₂ inch pieces. Heat coconut oil over medium heat in a 10-inch skillet. Add sweet potato and sprinkle spices over the top. Cook over medium, stirring occasionally until sweet potato is cooked through.
