AROMATIC VEGETABLE RICE |
INGREDIENTS
1/2 kg basmati rice soaked for 15 minutes
2 medium onions fine chopped
2 medium tomatoes cut into 4 each
3 medium potatoes cut into 8 each
200 grams green peas
Half medium sized cauliflower cut into 1 and half inch
pieces
2 pods of garlic
2 inch ginger pieces
3 green chilies
Handful of chopped coriander and mint leaves (hara dhania
pudina)
1/2 cup yogurt or dahi
1 tsp. red chili powder
1 tsp. dhania powder (coriander seed powder)
1 tsp. kasoori methi (dried fenugreek leaves)
Salt to taste
GARAM MASALA
1 star anise (badam phool) 3 cloves (long) 1 inch cinnamon
(dalchini) 6 peppercorns (kalimiri) 3 cardomons (elaichi)
1 tsp. cumin seeds (jeera) 1 bay leaf (tej patta)
METHOD
Grind ginger garlic green chilies into fine paste
Heat oil or ghee in a vessel golden brown chopped onions and
all whole garam masalas together
Add ginger garlic green chili paste dahi red chili dhania
kasoori methi and salt sautey few minutes till masala is roasted properly
Then add the veggies chopped coriander and pudina also add
the tomatoes now and sautey everything with the masala for 3 to 4 minutes
Add the rice and mix everything well
Add double hot water to rice (if rice is 2 cups add 4 cups
water)bring to a boil cover and simmer for 15 minutes
After 15 minutes off the gas and let it stand for 10 minutes
then serve the pulao
Serve with raita pudina mint chutney mango chutney roasted
or fried papad pickles
