Frying Essentials: To fry at home, use a deep heavy-bottomed pot, like a Dutch oven. Fill the pot no more than two-thirds of the way with a neutral oil, like corn or canola. You want to taste your food, not the oil.

HOW TO DEEP-FRIED FISH
Ingredients
1/4 tea spoon curry powder.
1/4 tea spoon samba powder.
1/4 tea spoon chili powder.
1 table spoon soy sauce.
1 table spoon vinegar or lemon juice.
Salt to taste
1/4 tea spoon coriander powder.
Method
Mix all the ingredients and coat the fish with them, put the fish outside so that the spices dries in or you can refrigerate for some minutes and finally deep fry, make sure the oil is hot because if the oil is not hot, the fish will be soggy and breaks. Alternatively, you can also add garlic/ginger paste to your list of ingredients
