Chicken breast cubes are simmered with onions and mushrooms in a rich peanut butter sauce. This dish is so tasty it will have you licking your plate!
INGREDIENTS:
500 grams chicken, cut into small pieces
6 tablespoons creamy peanut butter
4 tablespoons tomato paste
2 tablespoons soy sauce
2 tablespoons honey
1/2 cup orange juice
1 tablespoon grated fresh ginger
1/2 teaspoon curry powder
Salt to taste.
2 tablespoons oil
Garnish:
3 to 4 green onions, chopped
1/2 cup whole peanuts (optional)
DIRECTIONS:
In a bowl, mix together the peanut butter, tomato paste, soy sauce, honey, orange juice, ginger and curry powder. Set aside. Season the chicken with salt. Heat oil in a large saucepan over high heat. Quickly brown chicken pieces on both sides (they don’t need to be cooked through, just quickly browned). Remove chicken onto a plate and cover with aluminum foil.
Once all the chicken pieces are browned, turn the heat down to low. Add peanut butter mixture, then add cooked chicken back to the pan. Cover and cook on low, for 30 minutes. After 30 minutes, remove the lid, and cook until the sauce reduces and thickens a bit. Garnish with green onions and peanuts. Serve with rice or mashed potatoes.
