This is probably the best spicy peanut sauce I've ever made, and I've tried at least half a dozen recipe before this. The balance of flavors peanut sauce fish and spinach is nearly perfect.
Ingredients
Peanut sauce fish.
Deep fried fish.
Ripe tomatoes.
1 big onion diced.
1 tea spoon fish masala.
1 tea spoon garlic and ginger past each.
3 scoops of peanut butter smooth or crunchy will do just fine.
Salt and pepper to taste.
1 bunch diced coriander leaves (dhania).
1 tablespoon cooking oil.
Procedure
Fry your onions, till translucent, add garlic and ginger paste, then fish masala then add your tomatoes, you can blend let the tomatoes cook till soft, add the fish, then add water to your peanut and let it dissolve into a smooth paste and add to the tomatoes, keep stirring as it sticks so fast, if very thick add some water and salt to taste spoon some of the stew and coat the fish on top, cover and let it simmer on medium heat for about 8 minutes, keep checking if the soup reduces or too thick adjust to your liking you can also add more peanut butter to it. Add your nicely chopped coriander leaves and serve with cassava and maize ugali.
