EASY PEPPER FLOWER-SHAPED EGGS

Method:
Cut bell peppers into ½ inch rings and remove all seeds, if needed.

Heat a non-stick skillet to medium low heat with some cooking oil. Place the rings on a skillet. Then crack an egg in the middle of each pepper ring. Cover and cook until done. Chop some chives and place the eggs on a plate, sprinkle with a little bit of chive, season to taste with some salt and black pepper.

TIP: if you like your eggs firm you need to lower the heat and cook the eggs few minutes longer.
