Peanut Butter Cookies Recipe

➠1 ¼ cup all-purpose flour
➠¹/₂ teaspoon baking powder
➠¹/₂ teaspoon Baking soda
➠¹/₂ teaspoon salt
➠¹/₂ cup softened butter unsalted
➠1 cup peanut butter
➠1 cup light brown sugar
➠1 teaspoon vanilla extract
➠1 egg
➠1 cup peanut butter chips
➠¹/₂ cup salted peanuts
Take one medium-sized bowl and whisk the flour, baking powder, baking soda, and salt together. Set that aside. In the bowl of an electric mixer, beat the butter, peanut butter, brown sugar and vanilla on medium speed until well combined, that takes about 1 minute.
Use the rubber spatula to scrape down the sides of the bowl. Then add the egg and beat until incorporated, about 20 seconds or so. Now add all the dry ingredients and mix on low speed until just combined. Remember to scrape the sides of the bowl if necessary. Now mix in the peanut butter chips and chopped peanuts on low speed.
Chill the dough for about one hour. You don’t need to do so but chilling the dough makes it much easier to handle. Position the oven racks in the middle and upper thirds of the oven and preheat to 325°F (165°C).
Using a medium cookie scoop form the dough into golf ball-sized balls on the prepared baking sheets. Then take a fork and using the tines mark a criss-cross pattern on the cookies, pressing them down slightly. Put them into the oven and bake for 10-12 minutes. If you don’t have air circulated oven then rotate the pans from top to bottom and front to back midway through, until puffed and golden on the bottom.
Take the cookies out of the oven and let them cool on the baking sheets for a few minutes, and then transfer to a rack to cool completely. Don’t transfer the cookies immediately because they are very fragile when hot and they will break if you try to move them. Once they’re cool they’ll firm up nicely.
