POTATO LATKES RECIPE


For those who want to do something different with potatoes. These are grated potatoes and grated onions bound with flour, salt, and eggs, then fried in oil to make delicious potato pancakes that are crispy on the outside and soft on the inside. Absolutely delicious snack.

POTATO LATKES RECIPE


INGREDIENTS:

➺7 medium potatoes, peeled and grated.
➺1 small onion, grated.
➺2 eggs, beaten.
➺2 cloves grated garlic.
➺¹/₂ cup all-purpose flour.
➺1 teaspoon baking powder.
➺1 teaspoon salt.
➺Oil for deep frying.

Directions

Place the potatoes in a cloth and wring, extracting as much moisture as possible. In a medium bowl stir the potatoes, onion, eggs, flour, and salt together.

In a large heavy-bottomed skillet over medium-high heat, heat the oil until hot. Place large spoonfuls of the potato mixture into the hot oil, pressing down on them to form ¹/₄ to ¹/₂ inch thick patties. Brown on one side, turn and brown on the other. Let drain on paper towels. Garnish with finely chopped green onion. Serve hot!

Cooks' notes:
  • Latkes may be made up to 8 hours ahead. Reheat on a rack set over a baking sheet in a 350°F oven, about 5 minutes.
  • Grating the potatoes, soaking them briefly in water, and then squeezing out the liquid (as we've done here) keeps the batter from turning brown too quickly.
