CREAMY GOAT MEAT AND COCONUT CURRY RECIPE

Goat meat is a delicious option to beef for preparing curry. The flavor of goat goes extremely well with coconut and spices.


CREAMY GOAT MEAT AND COCONUT CURRY RECIPE



INGREDIENTS

➲¹/₂ kg goat meat cut into portions.
➲2 medium onions chopped finely.
➲4 cloves garlic grated.
➲1-inch ginger grated.
➲2 tomatoes.
➲1 cup coconut milk (get from supermarkets).
➲4 tbsp. Ghee (supermarkets, cooking oil. section) or substitute with cooking oil.
➲1 tsp. ground cumin.
➲1 tsp. garam masala.
➲1 tsp. coriander powder.
➲¹/₂ tsp. turmeric.
➲¹/₂ tsp. black pepper.
➲Salt to taste.
➲Slice of lemon (to garnish).
➲1 tbsp. plain yogurt ( to garnish).

METHOD:

Melt the ghee in a saucepan and add the ground cumin, garam masala, and coriander. Cook for one minute and then add turmeric and black pepper. Fry for one more minute then add goat meat. Allow to cook until juices run out and the meat turns brown and tender. Stir frequently to prevent sticking. Add a little water if needed.

Add the onions, garlic, and ginger and mix well. Allow cooking for five minutes while stirring. Add tomatoes and cover over low heat until tomatoes soften. Add 1/4 cup water if needed.

Pour in the coconut milk and simmer until the curry thickens. Add salt to taste. Serve immediately and garnish with lemon and yogurt. Serve with chapati, pasta, rice or roasted potatoes. Enjoy!

TIPS: Always add salt at the end of cooking meat dishes. Adding it at the beginning causes the meat to toughen.

Ghee adds a wonderful buttery taste to food. It is especially great with meats. After opening, store in a refrigerator to prevent it from going bad.
